DRUNKEN NOODLES

I prepared this for dinner last night.

I like to make foods that are unique as well as tasty. I also like the making process. While many people see chopping vegetables as drudgery, I have always enjoyed prepping ingredients, organizing them in colorful order and then cooking up food quickly by adding one tasty ingredient at a time.

That’s why I love making this dish. Here is the recipe. (I rarely measure much of anything, so if you have questions about measurements, I will try to answer in the comments. This is all approximate, as I cook mostly by channeling my mother and not by recipes.)

Ingredients

lots of chopped 🧄garlic (I think I used 8 or 9 large cloves)
1 thinly sliced shallot 🧅
1 hot red pepper🌶,seeded and thinly sliced
1 large 🥬 bok choy, greens only, thinly sliced
*very* thinly sliced high quality filet mignon 🥩
Wide rice noodles (2 packages
a bunch of fresh 🌿 basil leaves

Sauce

1/4 cup oyster 🦪 sauce (real oyster sauce, not the fake stuff, get the kind where the first ingredient is oyster extract)
1/8 cup dark soy sauce
1 tablespoon fish 🐠 sauce (maybe 2 tablespoons if you really like umami flavor)
2 tablespoons brown sugar

Make It Like This!

Heat a tablespoon of oil, sauté the garlic, peppers and shallot

Add the book choy and sauté

Add the beef and cook through

Add the wide noodles and stir quickly and thoroughly to coat them with vegetables and flavor, making sure the noodles do not clump together like they will try to do …

Add the sauce and mix and flip everything around until the flavors of everything are on everything. (That is a term of art. **Put everything on everything.**)

Remove from heat and add the basil leaves and flip and mix around more.

Serve immediately. (I sometimes add a splash of peanut sauce.)

Eat. Enjoy. Yum.

This is one of the few dishes I make that EVERY single member of my family seems to love equally.

THE NEW DEFINITION OF "JOB"

Since it's Labor Day, let's talk about labor.

A job is not something someone else gives you.

It's something you create for yourself.

I discovered this 21 years ago when I created my own job, @indiebusiness . Everyone thought I was crazy, and I think I kind of was. But I wanted to work on my own terms. I wanted to be available to my children while they were young. I wanted to be at all of the games and practices and pediatrician's appointments. I wanted to have the freedom to learn new things and grow and travel and pursue my passion to help other women build successful businesses

I had and continue to have a lot of help along the way, from family and friends, and also from my amazing members and clients who give me a reason to wake up every day.

I love my job. I also don't have one. What a paradox.

Let’s talk ladies!

I have always been more interested in relationships and experiences than I have been in fancy cars, massive homes and big bank accounts. When I was younger, most of my professional colleagues were happy with our huge Washington, DC attorney salaries. I was grateful, but I was also unhappy. We made a lot of money, but we didn't have the time or peace of mind to enjoy doing anything especially meaningful with it.
.
Every vacation was rushed and we were usually expected to spend part of it getting client work done. I did not want my future to look like that. So, I traded that life for the freedom, flexibility and fun of defining success on my terms. 21 years later, I'm so glad I did.
.

(Interestingly, the Instagram posts from my former legal employer feature attorneys talking about what a flexible lifestyle they have. 'Bout time!! When I asked them if I could work from home a few times a week, they looked at me like I had two heads.)
.
My lifestyle business has allowed me to raise two children 👶🏽 👶🏽 from the comfort of home, and be more available to them than I ever would have been had I worked for someone else.
.
As they say, the best way to predict the future is to create it. So, I did.
.
The best thing about all of this is that it has positioned me to show YOU how YOU can create and enjoy a lifestyle business of your own. Stay tuned!

This afternoon was a wonderful time of making progress on goals and masterminding various aspects of life and business with my @indiebusiness members.

I learn so much from these women, and I enjoy seeing them learn from and encourage each other.
.
There is greet accountability, but more than that, there is seeing how one person’s experience positively influenced another’s.
.
These ladies are determined and persistent, and also, giving and loving. They are the very definition of success. Follow them!

Like many people, I am on a seemingly never-ending

Like many people, I am on a seemingly never-ending quest for the discipline needed to make more healthful food choices.
.
There was a time when this was far more difficult than it is today. The Internet has unleashed so many innovative food options that truly nourish us. 👏🏽🎉😀
.
Of course the crappy food is still out there, around every corner. But the number of alternatives is growing and it is helping me to break some long-standing habits.
.
Not too long ago, I would never have thought to have greens with breakfast. Unless it was some little sprig of parsley on the side of a plate filled with - well, not greens. 😳
.
But this is a fun change to be making and with help from some really great longtime friends who care about me personally (including @healthywholealive and @comemakewithme), along with my amazing brother @jeffcoles whom you all know walks on water as far as I’m concerned, I am putting together breakfasts with lots of greenery. 🥬 🌿 🌱
.
This is a slice of chicken maple sausage from @applegate, boiled eggs with @mortonbassettspices Everything Sprinkles, and a wad of kale salad with walnuts, dried cranberries, apple chunks and a lemon vinaigrette dressing, from @thefreshmarket . It’s crunchy and delicious. 🍋🍎🌈
